I was recently given the chance to try out Old El Paso‘s new frozen entrees for two. They can be found in the freezer aisle at your local grocery store.
During the week, I’m a big fan of easy dinners so I was very excited for the chance to try them.
There are eight kinds to choose from including fajitas, quesadillas, enchiladas, and burritos.
We went with the steak fajitas.
It was full of steak, onion, and both red and green peppers.
I was extremely pleased with how easy it was to make, and the calorie content was a bonus too: only 270 calories per serving.
We served ours with tortillas, homemade salsa, homemade guacamole, tortilla chips, and homemade margaritas. (recipe below) There wasn’t a bite left of the fajitas!
I’m looking forward to trying the other varieties!
And here is a delicious, homemade margarita sure to please anyone’s taste buds. Neither of us are huge fans of tequila so I made sure to keep that in mind while making it, but you can easily increase the amount if you like it stronger. Making it as below comes out with just a tiny hint of tequila. Olé!
Orange Citrus Margarita
- 1/4 cup granulated sugar
- 1/2 cup water
- 8 oz fresh squeezed orange juice (about 3 large oranges)
- 2 oz syrup
- 1 oz tequila
1. Combine the sugar and water in a small saucepan over medium heat. Stir until sugar is dissolved. Place in the fridge. Cool completely.
2. Dip the tops of your margarita glasses in water and then salt or sugar, depending on your preferences. We used sugar.
3. Put orange juice, syrup, and tequila in a shaker cup with ice. Shake for a few seconds then pour into cups. Garnish with an orange slice and serve immediately.
Question of the day: What’s your favorite Mexican dish?
I love fajitas, enchiladas, and LOTS of guacamole!!
Please drink responsibly.
