Happy Halloween!!!

Are any of you dressing up tonight? This is the first year in probably 6ish or so years that I haven’t dressed up. It’s so much money to buy those darn costumes only to let them sit in your closet after one wear. I know a lot of my friends made their costumes this year though and they actually turned out awesome. Crafty friends.

Today is our last day of the October #liftpraylove Challenge. How have you been doing? Today’s goal is to make one of my recipes! (enter shameless plug here) I have to get you guys to try my recipes some way.

For WHAT TO EAT WEDNESDAY, I made you a pumpkin pie protein smoothie. I know, I know.. it’s freezing, what am I thinking? Fact: It is the season and I love protein. Duh. BUT the nice thing about this recipe? It doesn’t include ANY protein powder so you have no excuse not to make it. Except for the fact that it’s 35 degrees here in IL. Grab your blanket, heating pad and straw. You’re going to want to make this.
Pumpkin Pie Protein Smoothie
Ingredients:
- 1/2 banana
- 1/2 cup pure pumpkin
- 1/2 cup low fat cottage cheese
- 1/4 cup liquid egg whites
- 1/2 cup unsweetened vanilla almond milk
- 1/2 tsp pumpkin pie spice
- 2 pkts truvia
- 1 cup ice
- 1/8 tsp xanthan gum (optional)
Directions:
Add everything to a blender or food processor and mix until smooth. Sprinkle the top with pumpkin pie spice and enjoy!
Approximate Nutrition Values:
284 calories
4.8g fat
37.1g carbs
7.4g fiber
16.3g sugar
23.2g protein
