It’s been a week since I’ve lifted. If you follow my facebook page, you remember last week I posted something about being down in the dumps. The neck injury has taken a toll on me, but it’s not something that I can’t overcome. I think I’ll lift tonight but very very lightly. 5 lb dumbbells, say what?
A little over a week ago I picked up a new squash from the farmer’s market called delicata.
I tried it this morning with breakfast, and I have to say… I am a big fan. I can’t get enough of fall’s vegetables so why not add another to the list. According to wikipedia, it’s not as high in beta-carotene as others squashes, but it is a good source of fiber and potassium. Nutrients from whole food? I’ll take it. Plus, it’s on the sweeter side so you don’t need to top it with any butter or sugar. Although, I could totally see this being paired with some coconut oil.
I also had an egg white, spinach and string cheese omelet topped with a little tomato basil bruschetta and a homemade vanilla latte. <– This is my favorite drink at Starbucks but a) the regular is WAY too high in sugar and b) I don’t drink artificial sweeteners anymore so the sugar free syrup is out of question. SO, in an effort to still drink my addiction, I’m trying to make it at home. This wasn’t perrrfect so once I get it, I’ll post the recipe.
Any other Starbucks addicts out there?
So far I have one snack down the hatch.
1 slice P28 Bread with a tbsp of natural peanut butter and a tbsp of Trader Joe’s organic strawberry jelly.
Now I’m off to get some more work done, train a few clients and eat (<– best part of the day, right? ;))
**Question of the day: If you had to pick ONE vegetable to eat for the rest of your life, what would it be?
I would probably choose zucchini. Or asparagus.. if it didn’t make your pee stink so much. TMI.
