Blueberry Muffins
adapted from this recipe
Makes 12 muffins
Ingredients:
- 1 cup all purpose flour
- 1/2 cup whole wheat flour
- 1/2 tsp baking soda
- 1.5 tsp baking powder
- 1/2 tsp nutmeg
- 1/4 tsp cinnamon
- 1/2 tsp salt
- 1/2 cup stevia in the raw
- 1/2 cup unsweetened applesauce
- 1/2 cup unsweetened vanilla almond milk
- 1/2 tsp vanilla extract
- 1 cup blueberries
Directions:
1. Preheat oven to 350 degrees and lightly coat a muffin pan with nonstick spray.
2. In a large bowl, combine flours, baking soda, baking powder, nutmeg, cinnamon and salt.
3. In a small bowl combine stevia, applesauce, milk and vanilla extract.
4. Add milk/sugar mixture to flours and stir gently to combine.
5. Fold in blueberries.
6. Fill muffin tins 2/3 full.

7. Bake muffins for 23-25 minutes or until they are lightly browned.
8. Let cool in pan for 5 minutes before transferring to a wire rack to cool completely or serve immediately.
