Dessert for One

I don’t know about you guys, but sometimes when I want dessert, I don’t want to whip up a whole batch of brownies or cupcakes to have sitting around the house begging me to eat them.

So one day I came across a recipe for a cupcake for one… perfect!! I made a few changes to it and it came out delicious. The only downside… make sure you lightly coat your pan with non-stick spray and do not use a cupcake liner. This cupcake is super low in fat so it sticks to the liner. You’ll end up with this:

no bueno.

Other than that little mishap, the cupcake is delish. It satisfies. It’s a dessert. AND it’s only 111 calories. #livehealthylivehappy
