First off, you may be wondering – what is gluten? According to this website gluten is..
Basically it gives elasticity to dough, helps it rise, and gives it a chewy texture.
Many people are realizing they have a gluten intolerance and get sick/have digestive problems when they consume foods with gluten. On that same site, it’s stated that 1 out of 133 people has celiac disease – which is an autoimmune disease that affects the small intestines. (source) Luckily, many stores and even restaurants are now carrying and serving gluten free items.

Semolina
Spelt
Triticale
Wheat
And some that are gluten free:
Almonds
Buckwheat
Chickpeas
Corn
Flaxseeds
Lentils
Oats
Peanuts
Potatoes
Quinoa
Rice
Walnuts
Some foods like oats are often processed and contaminated with gluten so the FDA requires clear labelling of gluten-free products.
Keep in mind, however, just because something is gluten free, does not make it healthy. One of my favorite websites to follow for gluten free and healthy recipes is Elana’s Pantry.
She has all kinds of recipes, from breads to breakfast. Dinner to dessert. She also has 2 cookbooks. One for cupcakes and this one that I realllllly want to buy:
Anyways, I think I’ve rambled enough but if you think you have a gluten intolerance because you’re having issues after you eat some of the foods on the “avoid list” you may want to check with your doctor. Switching to a gluten free lifestyle may be a better option for you.
